Tap-and-hold in Safari (the iPad2 browser) is like a right-click on a PC. It allows you to copy the current selection. It's not a left-click and hold.
No wonder it doesn't work then!
It seems however, that some people have managed to make it work.

Your demos still don't work, but the sewa.se and the gotproject.com demos all work great!
Only problem is, those that work on the iPad, don't work on the PC. Why can't we all just get along??
