As you said, you have to fire to change ammo, so you throw away your carefully prepared first shot, whether you fired it at a target or not. Anyway, it's in the official rules.

No, they don't.
Chain gives a bonus on HDT. But at the same time, chain will not hurt hull or guns (so it is usually useful only if aimed at riggings).
Grape works differently. Grape actually gives a malus to HDT. However, the resulting HDT is the number of crew killed. Usually only in rake position or with a better than average crew you will score crew kills, but it can be useful in those conditions.
Thrid Question I have never seen any other player use anthing except SIngle shot, is there a reason?
Non-standard ammo have somewhat limited application, due to the way they work, especially grape (see above). This limited application is further restricted by their range: grape and double-shot can only be fired at range 1. Chain shot instead can be fired up to range 3, so I think we might see a wider usage as people get to know advanced rules.
